Thin, layered pastry sheets for samosas and spring rolls. Makes 8 rounds

Ingredients
Method
0/8 doneStep 1: Mix 7 oz plain flour, 1 tbsp lemon juice and 1 ½ tsp salt and bind into a firm dough by adding ½ cup ice-cold water a little at a time.
5 minStep 2: Divide the dough into 8 portions.
Step 3: Take two portions and roll each into a small round, about 8 cm across. Spread a little 2 tbsp oil over each round with a teaspoon, dab with flour, and place one on top of the other, oiled sides facing each other.
Step 4: Gently roll the pair out into a thin chapati, 25 cm across.
Step 5: Roast the chapati on a griddle on a very low heat, lightly on both sides, just until it firms up without browning.
2 minStep 6: Take it off the griddle and, while it's warm, gently peel the two layers apart without tearing them.
Step 7: Make the rest of the chapaties the same way and wrap them in a muslin cloth to keep them soft.
8 minStep 8: Cut the chapaties to the size you need: long strips for samosas, squares for spring rolls.
