Moist banana bread

One-bowl loaf for the spottiest bananas

The blacker the bananas, the better the loaf. This one is mixed in a single bowl with melted butter and a little brown sugar, so it's soft, deeply banana-y and keeps well for days.

  2. Step 2: Mash 3 very ripe bananas in a large bowl, then whisk in 3 ½ oz butter, 5 ½ oz light brown sugar, 2 eggs and 1 tsp vanilla extract until smooth.

  3. Step 3: Add 8 oz plain flour, 1 tsp bicarbonate of soda, 1 tsp ground cinnamon and ¼ tsp salt and fold together until just combined. Stir in 2 ⅛ oz walnuts.

  4. Step 4: Scrape into the tin and bake until risen, golden and a skewer comes out clean. Cover with foil if it browns too quickly.

Boiled pasta

The basic method for any dried pasta, from penne to spaghetti. A large pan of salted boiling water keeps the pasta from sticking, and you cook it only until just done, with a little bite left. Use it in salads, bakes or with any sauce.

Home-made spicy tomato ketchup

A proper home-made ketchup: fresh tomato puree boiled down with sugar and a muslin bag of whole spices, then sharpened with vinegar. It's thick, glossy and gently spiced. It keeps for a long time in the fridge and is great in pasta dishes.

Vegetable brown stock

A hearty stock that's simmered for 2 hours, then blended and strained, so the potato gives it body. Its deeper flavour suits thick soups, gravies and stews. Freeze it in portions so it's ready when you need it.
